A more convenient system for routine starter culture maintenance

11 single-strain and 7 commercial multiple-strain starter cultures in RSM medium were frozen and stored for up to 12 wk at -20 deg C. After thawing for 1 h at room temp. and incubating for 18 h at 25 deg C, samples were tested by the modified Pearce activity test as described by Hull & Juffs (Dairy Products (1980) 8, 15). At the end of the storage period, all cultures were still viable and showed high activity.
