A new approach to the standardization of milk-clotting enzyme preparations

The method is based on turbidity measurements at 450 nm of dried skim milk, reconstituted at a low concn. in a pH 5.6 buffer containing 12 mM CaCl2 and 4 different high concn. of the milk-clotting enzyme.
