A new evaluation scheme for the assessment of baking quality in bread wheat varieties. Results of main trials, 1981

The new evaluation scheme, which assesses protein quality characters, baking quality and starch characteristics, does not provide an absolute quality grading but rather permits a comparative assessment of different varieties.
