A preliminary study of calcium binding to beta -casein using 31P nuclear magnetic resonance spectroscopy (NMR)
At pH 7, examination of bovine beta -casein with a JEOL FX 60 spectrophotometer at 24.15 MHz showed 4 peaks, accounting for 5 phosphoserine residues. Comparison with a beta -casein phosphopeptide (residues 1-25) showed that the low-field peak was SerP-35. In the phosphopeptide, all peaks moved to varying degrees to low field with increasing Ca addition.
