Characterization of exopolysaccharide produced by a Corynebacterium in cheese whey substrate
Corynebacterium strain 98 produced an orange-pigmented exopolysaccharide in high yield when grown at 30 deg C for 7 days in deproteinized sweet whey enriched with MgSO4, FeSO4 and lactose and adjusted to pH 7. The viscous gum was precipitated after 15 days and freeze-dried.
