Characterization of psychrotrophic sporeforming bacteria and their extracellular enzyme systems
3 psychrotrophic sporeformers were studied, namely: (i) an organism (KG7) isolated from pasteurized milk and identified as Bacillus cereus, (ii) B. psychrophilus ATCC 23304, and (iii) B. psychrosaccharolyticus ATCC 23296. The aims were to determine selected growth and heat resistance characteristics of the organisms, to concentrate and purify their extracellular proteinases and to ascertain the effect of selected physical and chemical factors on enzyme activity.
