The Pasilac/Gadan vacuum press for Cheddar cheese manufactured by Pasilac A/S, DK-8600 Silkeborg, Denmark is described and photographically illustrated. It consists of independent stainless steel cassettes each holding 6 moulds for 20-kg cheeses, with 2, 3 or 4 cassettes being stacked into independent columns. Each 6 moulds are filled with pre-pressed curd, transported by mobile carriers to a cassette, loaded into it and the cassette lids are closed when a column is completed.
