Cheesemaking in Scotland
The history of cheesemaking in Scotland is traced from 17th century reports of the use of whole milk to make a Dunlop type cheese to the formation of the Company of Scottish Cheese Makers in 1954, the introduction of block cheese in 1956, individual pre-packaging in the 1960s and development of mechanized cheesemaking systems in the 1970s.
