Chemical composition of royal jelly
The samples of royal jelly analysed contained: water, 66.9%; protein, 11.4%; sugars, 9.1%; ether extract, 6.2%; ash, 0.94%. The water-soluble proteins (75-85% of total) gave 5 fractions upon electrophoresis, and 3 in Sephadex G-100 column chromatography. The main amino acids were aspartic acid, lysine, serine, glutamic acid and proline. The main sugars were glucose, fructose and sucrose. The ether extract contained acids, of which the chief was 10-hydroxy-2-decenoic acid.
