UK Patent Application: (GB 2 079 287 A)

A particular object is to provide enriched pasta products with a min. of 20% protein and PER of about 2.375 or more, using a whey/caseinate additive. This is prepared by heating an aqueous blend containing 2% whey protein concentrate, 2% calcium caseinate and 96% water to about 83 deg C for about 18 min with attendant whey protein denaturation of some 60%, and spray-drying to 5% moisture.
