Details are given of the Giant Food's ice cream plant at Jessup, Maryland, with particular reference to process control which starts in the receiving area, after each ingredient has been analysed for quality and components. Freezing is in two 1200-gal/h ice cream freezers, and the product, after packaging in 0.5-gal units and shrink-wrapping in batches of 3, is hardened at -40 deg F to a core temp. of 0 deg F, is manually palletized and stored at -20 deg F.
