Highly mechanized line for the production of coated cheeses

Molochnaya Promyshlennost' (9): 31-32

An installation for making coated cheeses with a capacity of 180 cheeses/min is described. The process involves moulding prepared curd mass, cooling the cheeses to 2-4 deg C, coating them by pouring the coating material at 28-30 deg C over them, wrapping in parchment paper and packing in crates or boxes. The initial wt. of the cheeses is 40 g and this is increased to 50 g after coating. The installation is 10 m long and requires 8.9 kW electricity.
