The general history of Kachkaval (Caciocavallo) type plasticized cheeses is outlined from literature data. The manufacture of Kachkaval cheese in Bulgaria is traced back to 1558 in Vidin region, spreading in the 17th and 18th centuries to other regions and becoming in the middle of the 19th century the main hard cheese of the country.
