Human milk sulphydryl oxidase: stability of milk enzymes in the GI tract

Human milk thiol oxidase was acid resistant and resistant to proteolysis by pepsin, trypsin and chymotrypsin. Thiol oxidase had a pH optimum of 7.0-7.5 and was thus likely to function in the small intestine but not in the stomach.
