USSR Patent: (SU 843 699 A)



A method for the production of a yoghurt type product and soft tvorog involves incubation of pasteurized, fat- and TS-standardized milk with 4-10% starter, comprising 80-90% bifidobacteria resistant to high acidity, and 10-20% mesophilic streptococci, or thermophilic bacteria, fermenting milk at 41-44 deg C, followed by conventional process used for the particular product.
