Strains of 30 Lactobacillus spp., 3 Leuconostoc spp., 2 Pediococcus spp. and 4 Streptococcus spp. were grown in Rogosa SL medium for 4-6 days, and then heated briefly at 100 deg C to inactivate enzymes.
