Rheological models of liquid food products and semi-manufactured products

Rheological models of liquid food products and semi-manufactured products

Prumysl Potravin 32(11): 624-628

Practical aspects of rheological model application in description of rheological behaviour of food materials are considered; ranges of shear velocities in different dairy factory and meat factory equipment and in rheometers of various makes are tabulated, and some simple and practically-useful models are presented.
