Serum cholesterol levels of calves and rabbits fed milk replacers containing skim milk powder or soybean protein concentrate

Calves (aged .apprx. 7 wk) were fed liquid diets containing either skim milk powder or soybean concentrate for 14 wk. Serum cholesterol levels of the calves did not differ in statistical terms. The calf-milk replacer diets were also fed to rabbits (aged 12 wk) since these animals are known to be susceptible to the type of dietary protein with regard to their serum cholesterol levels. Casein induces high levels of serum cholesterol, whereas serum cholesterol in rabbits remains low on soybean protein-containing diets. The milk replacer diet containing skim milk powder caused significantly higher serum cholesterol values than the soybean protein concentrate diet. These effects were observed within 3 wk. The young rabbit is more sensitive to the type of dietary protein with respect to its serum cholesterol level than the young bovine.
