Study of production of Sjenica cheese

This lecture, presented at the 20th Seminar of the Dairy Industry held on 10-12 Feb. 1982 in Zagreb (Yugoslavia), deals with farm and semi-industrial production of Sjenica cheese in SW Serbia. DM, fat, NaCl, pH and titratable acidity were determined in cheeses aged 1, 2, 3, 4 or 5 months from individual farms, and from the PIK 'Pester' co-operative cheese factory and store, for which 6-month cheeses were studied also.
