Alcohol production from whey permeate by immobilized and free cells of Kluyveromyces marxianus NCYC 179

Immobilized and free cells of Kluyveromyces marxianus NCYC 179 and Saccharomyces cerevisiae NCYC 240 were compared for their ability to metabolize lactose from whey permeate for ethanol production in batch fermentation. The latter was found inefficient, whilst K. marxianus NCYC 179 completely consumed whey lactose with concurrent production of 42.6 g ethanol/l, when the fermentation was carried out at pH 5.5 and 30 degrees C.
