Carotenoid content and composition of various German potato varieties and their importance for tuber flesh colour

Carotenoid content and composition of various German potato varieties and their importance for tuber flesh colour

Potato Research 26(2): 149-162

In 13 varieties grown at one locality in one year, total carotenoid content ranged from 27 micro g/100 g fresh weight in Kero to 343 micro g in Monza and was positively correlated with intensity of (yellow) flesh colour. The relationship was generally linear, except in cultivars (such as Monza and Granola) with a very high carotenoid content.
