Purified beta -D-galactosidase from Aspergillus oryzae was covalently immobilized onto a phenolic amphoteric ion-exchange resin using glutaraldehyde. In a continuous operation, a space velocity of nearly 60/h gave 80% hydrolysed whey at 45-50 degrees C. Higher productivities were obtained at lower temp. because of long half-lives, although reaction rates were slow.
