Observations on the enumeration of moulds in food and feedingstuffs

Methods available for measuring moulds in foods and feedstuffs are discussed. They include direct microscopy and fluorescence microscopy, direct plating, membrane filtration techniques, measurement of cell-wall chitin or ATP and electrical measurements. Sampling, sample size, preparation of sample homogenates, culture media, plating techniques, dilution errors, competitive inhibition and intra- and inter-laboratory errors are discussed. The choice of method depends on the test material and on the contaminating mould present.
