Details are given of the construction and operation of KTW incubation and cooling chambers (KTW-Anlagenbau GmbH, 7257 Ditzingen, German Federal Republic) used at the MZ Karlsruhe dairy factory (German Federal Republic) for a range of various types of yoghurt. The 7 chambers accommodate a total of 21 pallets and the av. throughput is about 60 000 cups/day.
