Analysis of milkfat and modified milkfat by gas chromatography

Current Valio Laboratory methods for the analysis of esterified fatty acids of milk fat and mixed-fat products by GLC of fatty acid methyl esters with packed and capillary columns, and of sterols of these products by GLC with a packed column are described. Packed columns are cheap, long-lasting and gave superior estimation of major peaks than capillary columns. Enzymic analyses indicated that the GLC method yields valid estimates of total polyunsaturated fatty acid content of milk fat.
