Bull fattening under controlled conditions of management and slaughter. Occurrence of DFD meat and the influence of exogenous factors

Dark, firm dry (DFD) meat is found in young bulls even when transport conditions have been good and lairage conditions before slaughter ideal. Taking a limit of pH 6.10 48 hours after slaughter, 59 (6.16%) of 958 carcasses of young bulls had DFD meat in the longissimus muscle and 12 (1.25%) in the semimembranosus muscle.
