The butter-like concentrate is a mildly heated mixture of 25-85% of an oil or fat (containing butterfat at preferably <more or =>25%); 5-37% protein (preferably whey protein); 5-37% carbohydrate; 0-20% other additives, e.g. emulsifiers. The butter-like concentrate is heated, preferably at 100 degrees C for 30 min so that it contains 5-hydroxymethylfurfural and maltol at levels which increase considerably upon further heating to 135 degrees C for 10 min in a closed vessel.
