30 samples of spray-dried skim milk, 22 samples of dried whey (produced with calf rennet, bovine rennet substitute or microbial enzymes) and 15 mixtures of dried skim milk and sweet whey were tested for whey by a method in which glycomacropeptide was precipitated with phosphotungstic acid and the sialic acid liberated by acid hydrolysis was determined colorimetrically in presence of thiobarbituric acid.
