A previous article reported work on the calibration of an NIR instrument, the Technicon Infra Alyzer 400 (IA-400), for analysis of dried skim milk samples throughout the EC. This article describes similar work on the calibration of the same instrument for determination of moisture, protein, lactose, lactic acid, fat and ash in dried buttermilk.
