Differentiation of buttermilk from cultured skim milk

A procedure for distinguishing genuine buttermilk (the byproduct of buttermaking) from cultured skim milk is described. As the 1st step, phospholipids in the fat globule membrane are determined by extracting fat with diethyl ether and light petroleum, ashing the extract (to convert the P in the phosphatides to inorganic phosphate) and photometrically determining the reaction product with ammonium molybdate.
