Differentiation of starch property in perisperm of grain amaranths

Tabulated data on starch properties (glutinous vs. nonglutinous) are presented for 8 lines of Amaranthus hypochondriacus and 7 of A. caudatus, the former from Mexico and Nepal and the latter from Nepal, China and Japan. Data including grain appearance, starch type, colour reaction to iodine staining, amylose content and gelatinization temperature of the perisperm starches from 3 plants of A. hypochondriacus and 1 of A. caudatus showing contrasting starch properties are tabulated.
