Digestibility of protein and energy in diets based on rice and beans for adult persons

For periods of 10 days 10 men were given diets based on rice and beans (Phaseolus vulgaris) to supply nitrogen 46, 72 or 103 mg/kg daily. When the basal diet (rice provided 60 and beans 40% of the protein) was given at 103 mg N per kg and gross energy 50 kcal/kg daily, apparent and true digestibility of N was 59.1 and 70.8%, respectively; digestibility of energy was 93.8 and of metabolizable energy 92.5%.
