Digestible and metabolizable energy from cowpea (Vigna unguiculata (L) Walp) meal 'akara'

From 28 days old 52 male Wistar rats were given a basal diet without or with 40% cowpea (Vigna unguiculata) meals, raw or as autoclaved freeze-dried paste or in a fried form of the paste popular in Nigeria (akara). Digestible energy (DE) did not differ significantly among the raw preparations and ranged between 2.63 and 2.71 kcal/g. Metabolizable energy (ME) was 2.29 to 2.42 kcal/g. After autoclaving, DE was 3.63 to 3.83 and ME was 3.38 to 3.52 kcal/g.
