Direct heating of drying air (by mixing with hot combustion gas) in dried milk production can give annual savings of f50 000-120 000 compared with indirect heating via a heat exchanger, but in experiments at NIZO in the 1970s direct heating increased the nitrite content of dried milk from 0.4 to 3 mg/kg and the nitrate content from 8 to 14 mg/kg on average. This contamination is likely to be reduced when low-NOx burners are used.
