An analysis is presented of megatrends in US society and the economy, and the ways in which the food service industry is adapting to them. The self help nutrition ethic, for example, has led to menu changes and a wider range of choice in many restaurants. The emphasis upon cultural diversity has encouraged the development of numerous ethnic and American regional cooking restaurants, whilst eating habits are also changing, with more consumers missing meals.
