Experimental evidence for the occurrence in honey of specific substances active against microorganisms

The numbers of bacteria and fungi from samples of sewage, soil, air and tap-water that grew on various media containing honey were lower than the numbers that grew on media containing a solution of sugars at the concentrations at which they are known to occur in honey. The local honeys (referred to as cotton honey, clover honey and orange honey) which were used were analysed for hydrogen peroxide and shown to be peroxide-free.
