The variety 5, with resistance to Plasmodiophora brassicae, received the best sensory score in comparison with another resistant and a standard variety salted and soaked in brine, then stored in brine at 6 degrees C. The colour of the pickled product was better in both the resistant varieties when the pickle was stored at -2.5 degrees C than in the standard variety.
