Extractability and artificial digestibility of protein in leaves of several plants

The extractability and artificial digestibility of protein in some kinds of plants were investigated in order to compare the protein of water hyacinth with those of other plants. In the protein extraction, such extractants as water and alkaline alcohol solution were used. The order of the nitrogen yield of each plant changed according to the variety of extractant, and in both cases, the protein extractability of water hyacinth was the lowest. The artificial digestion trials using pepsin solution were carried out on the protein solution, instead of the protein isolated. From the trials, the digestibility of water hyacinth protein was found to be good. In water hyacinth, the utilization of isolated protein will be rather difficult because of its low extractability. On the other hand, the utilization of the dry matter itself will be valid because the dry matter of water hyacinth contains much protein.
