Extraction and quantification of polyphenols in coffee pulp

Polyphenols were extracted from coffee pulp using methanol, methanol and water (50:50), 3% ammonium hydroxide or 1% calcium hydroxide as solvents. There was no difference in amount of polyphenols extracted after 10 min or 1 h for each solvent. NH4OH and Ca(OH)2 extracted more polyphenols than the other 2 solvents, with NH4OH more efficient in extracting condensed polyphenols.
