Fully automatic process and apparatus for producing fresh potato dumpling dough in a form ready for despatch, and also as ready-formed dumplings

Presorted, washed and peeled raw potatoes are processed in the following stages: processing into pieces of the same thickness; boiling by exposure to hot water and/or steam whilst advancing continuously; the potato pieces (still having a raw breakable core) being firstly conveyed continuously through a water-bath and then cooled in an air stream; comminuting to the desired fineness; and mixing with the usual added seasoning; kneading into a dough; portioning into individual and/or multiple portions. Multiple portions are packaged, and individual portions formed into dumplings and subsequently packaged. A freezing stage before packaging or post-packaging climate control may be incorporated if desired.
