Method of and apparatus for cooling a wet particulate food product, especially a cheese type food product

Two manufacturing techniques for cooling particulate food material, particularly Cheddar cheese prior to packaging, are described. In (i), Cheddar cheese curd (at approx. 35 degrees C) is pressed, flash-cooled under vacuum (0-38 torr) for <less or =>15 min and the vacuum immediately released to cool the cheese to 22-26 degrees C. The cheese is then re-pressed and packaged.
