Nitrogen balance studies among boys fed combinations of faba beans and wheat differing in polyphenolic contents

For 2 to 3 days 10 healthy Egyptian boys 12 years old were given a diet with nitrogen supplied by whole egg 45, wheat flour 55 and vegetables 24 mg/kg bodyweight. During test periods, protein was supplied by faba beans (Vicia faba) to give N 58 or 77 mg/kg bodyweight with protein from wheat flour and vegetables. Metabolic balance studies showed that 58 mg N from faba bean was required in addition to 115 mg N from wheat and vegetables per kg bodyweight to achieve N equilibrium. Dehusked faba beans gave the greatest values for biological value and net protein utilization for mixed diets. Treatment of beans with ammonium hydroxide effectively destroyed polyphenols which were present.
