The mean fatty acid compositions of milk from cows, ewes, goats and buffaloes, determined in previous work by Galvano et al., are compared with each other and with corresponding values derived from published work of other authors. The data of Galvano et al. were obtained from milk produced on farms in SE Sicily only, thus reducing variations due to environmental factors inherent in general literature values.
