Tests of tvorog manufacture on a mechanized line



Molochnaya Promyshlennost' (4): 26-29



Tests on optimal conditions of operation of the mechanized line for tvorog of Kostin et al. are described. Best results were obtained by homogenization of skim milk at 12.5 MPa, pasteurization at 92 degrees C for 20 s, incubation at 24-30 degrees C of milk acidified to pH 4.5-4.7 by lactic streptococci, heating to 42-54 degrees C in 2-2.5 min and cooling to 25-40 degrees C in a straight-run heat exchanger, whey separation in a revolving filtering equipment, and further cooling.
