The microstructure of polished, milled and air-classified rice and rice bran



Journal of Japanese Society of Food Science and Technology 30(6): 331-338



Scanning electron microscopy showed that the cells of rice endosperm have a long rectangular columnar shape, distributed radially from the centre to the outer layer. Within the cells, starch granules were closely packed, coated with a thin cell wall and having protein bodies of approx. 1 micro m between them.
