A survey of coliforms and Staphylococcus aureus in cheese

Journal of Dairy Science 70(Suppl. 1): 87

54% of 256 samples of various types of commercial cheeses contained 10superscript 2-107 coliforms/g, highest counts being in fresh cheese products. 2% of 200 samples contained >1000 coagulase-positive Staphylococcus aureus/g.
