Assessment of a bifidus containing formula. I. Evaluation of the biological attributes

A bifidus-containing formula (BCF) containing viable Bifidobacterium bifidum cells was prepared from buffalo skim milk and rennet whey. Mean composition of the product, which contained 1.55 x 105 B. bifidum/g was (on DM basis/100 g) 26.6 g fat, 4.9 g casein, 7.4 g whey protein, 56.3 g carbohydrate, 1021 mg Ca, 541 mg P and 4 mg Fe.
