Assessment of dairy product quality utilizing bacterial enumeration and metabolite detection

Assessment of dairy product quality utilizing bacterial enumeration and metabolite detection

Dissertation Abstracts International, B Sciences and Engineering 46(6): 1759

In tests on 100 commercial milk samples, impedance detection (IDT) at 21 and 18 degrees C showed good correlation with shelf-life (r = 0.877 and 0.868 at the 2 temp., resp.), when compared with standard plate, psychrotrophic and modified psychrotrophic counts and Moseley keeping quality test.
