Assessment of processing conditions on the location and stability of vitamin A in fluid milk

A centrifugal separation technique was used to determine distribution of vitamin A in milk (raw, pasteurized or fortified pasteurized homogenized). Homogenization resulted in association of added vitamin A with milk fat.
