An account is given of dairying in Australia. The dairy industry is mainly situated along the SE coast of Australia and in the extreme SW. Extensive milk production throughout the summer (Sept.-Jan.) results in a marked seasonal increase. In order to keep consumption of milk relatively constant, factories utilizing manufacturing milk shut down for 2-3 months in the winter, and priority is given to consumer milk factories.
